1/2 kg Chicken
Ingredients:
2 tbsp Dhaniya powder
1/2 tsp turmeric powder
1 tbsp Ginger-garlic paste
3 tbsp Curd
1 tbsp Chilli powder(depends on your spice levels)
Salt to taste
Marinate Chicken with the above ingredients and keep aside for 1hr or overnight if you can for good taste.
Other ingredients:
3 cups Basmati rice
2 Bay leaves
2 Cinnamon stick(small)
2 Cardamom(elaichi)
2 Cloves(lavanga)
5-6 chillies(split long)
1 medium sized onion(sliced)
1/2 bunch mint leaves
1/2 tbsp lime juice
5 tbsp oil
Method:
1. Take a wide pan and add 2 tbsp oil to it.
2. Add cloves,cardamom,cinnamon and bay leaves to the oil and fry for 2min
3. Add the above mixture and salt to the washed rice and cook it in electric rice cooker with 3 glasses of water(use the same glass you used for measuring rice)
4. Take a wide pan and add 4-5 tbsp oil.
5. Add onions and fry till the onions turn dark brown in color and keep aside.
6. Add green chillies to the oil and fry them for 2-3 min and keep aside.
7. After the rice is cooked, remove the rice from the rice cooker.
8. Now we have to start layering the chicken and the rice. At the bottom of the cooker add little oil or ghee so that the rice does not stick to the base.
9. Make a layer of rice. On top of it add few chicken pieces,few onions,green chillies.
10. Now make another layer on top of it the same way starting with rice then chicken pieces,onions,green chillies.
11. At the end, the top layer should be filled with only rice with no chicken pieces,you can add mint leaves,green chillies and onions. Sprinkle the lemon juice on the top and pour little oil on the top.Leave it for cooking.
12. After the rice is cooked, mix it from the bottom so that all the ingredients mix well.(check if the chicken pieces are cooked well,if they are not cooked, leave it for cooking for some more time.)
Biryani is good with Mirchi ka salan and Raita.
