Bhendi fry

Preparation time - 15 min
Cook time - 25 min
Serves- 4

Ingredients:
1 kg Bhendi (chopped)
1 onion (chopped)
1/2 tsp of turmeric powder
2 tsp chilli powder
salt to taste

for seasoning:
1 tsp of mustard seeds
1 tsp of cumin seeds
2 cloves garlic (diced)
3 red chillies
1 stick curry leaves

Procedure:
1. Wash the bhendi , dry, and chop them.
2. Chop the onion.
3. Take a wide pan and add oil in it.
4. After the oil get heated add the mustard seeds, cumin seeds, garlic, red chillies and curry leaves.
5. Once the mustard starts to splutter add the onions and fry till the onions turn brown.
6. Add turmeric powder to the onions and fry for 2min.
7. Add the chopped bhendi to these onions and cover the pan with the lid for 5-10 min.
8. Remove the lid and keep stir frying frequenty so that the bhendi does not stick to the pan for 10min.
9. Add salt and chilli powder, and mix well for 5min.
10. Garnish with coriander leaves.

Bhendi fry served with roti/rice.
