Egg Fry

Preparation time - 5 min
Cook time - 15 min
Serves - 4

Ingredients:
4 tbsp oil
2 onions
3 egg with yolk, 5 only whites (too much egg yolk is not good for health)
1/2 tsp turmeric powder
1 tsp ginger-garlic paste
2-3 cloves(lavangam)
1 stick cinnamon
coriander leaves for garnishing(kothimeera)
salt to taste
2 tsp chilli powder (depends on spice levels)

For seasoning:
1 tsp mustard seeds
1 tsp cumin seeds

Procedure:
1. Cut onions into small pieces(dice) and keep aside.
2. Take a wide non-stick pan , add oil in it.
3. After the oil becomes hot, add cinnamon stick, cloves, mustard seeds and cumin seeds.
4. Once the mustard seeds start spluttering, add the onions to it and fry till the onions become brown in color.
5. Add turmeric powder and ginger garlic paste and mix for 2min.
6. Add the eggs to the above mixture, and keep mixing continuously so that it does'nt stick to the pan.
7. After 5min add salt and chilli powder. Mix for another 5min
8. Garnish it with coriander leaves(kothimeera).

Serve hot with rotis.
