Ingredients:
1 glass/cup whole green gram/lentil(pesaru pappu)
1 tbsp rice (to make pesarattu crispy)
Soak this above ingredients for 1-2 hrs
Other ingredients:
3 Green chillies (for grinding)
1 small Ginger piece(for grinding)
Salt to taste
Water for grinding
For Topping:
1 onion (chopped)
3 green chillies(chopped)
1 ginger piece(chopped)
Procedure:
1. After soaking the green gram(pesaru pappu) and rice for about 1-2 hrs, grind it with green chillies,ginger,salt and water. Add water at small intervals till the batter becomes a thick paste.
2. Salt can be added while grinding or after grinding.
3. Take a flat pan, and pour the batter in the middle of the pan and start spreading from the middle to the corners till it becomes a big circle.
4. Pour little oil on the top of the pesarattu so that it fries.
5. Add onions on top of it and press it so that it sticks to the pesarattu. You can also add onions after both sides are done if you dont want the onions to fry.
6. You can also add green chillies and ginger along with onions as topping if you want the pesarattu to be spicy.
7. Turn the pesarattu to the next side and leave it for 2 min till the onions turn brown.
Pesarattu tastes good with Peanut chutney.
