Paneer Pilaf (Cheese & vegetable fried rice)

This is the best vegetable fried rice i've ever tried. It tastes amazing.

Serves: 3
Preparation Time: 15 min
Cook Time:30 min

Ingredients:
2 cups Paneer(cheese cubes)
2 cups Basmati rice

Veggies:
1 green pepper(capsicum,sliced)
1/2 cup Beans(chopped)
1/2 cup Green Peas1/2 cup Carrot(chopped)
3/4 cup Tomato Puree

Spices:
1 tbsp Ginger-garlic paste
1/2 tsp turmeric powder
1/2 tsp red chilli powder
2 tbsp Fenugreek leaves(dried Kasoori methi leaves)
1/2 tsp Garam Masala powder
1/4 tsp Cinnamon powder/cinnamon stick
1/4 tsp Clove powder/2-3 cloves
1/4 tsp Cardamom powder
Salt to taste


Seasoning:
1 tsp Cumin seeds
2 Bayleaf
1 large Onion (sliced)
2 tbsp Oil

Procedure:
1. Heat oil in a pan,add cumin seeds,bayleaf and onions. Fry till the onions turn light brown in color.
2. Add the green pepper(capsicum),beans,carrot,peas and saute for 2min.
3. Add all the spices and salt and saute for 2min.
4. Add the paneer,rice and tomato puree and mix well.
5. Add 3 cups water, mix well and cover the pan till the rice is cooked.
6. Garnish with cilantro(kothmeer leaves).

You can also cook it in the rice cooker,after step 4 put the mixture into the rice cooker then add water and leave it for cooking.

Paneer Pilaf tastes good with plain curd or raita.
